What a quickie stir fry!!
Stir frys are the perfect mid-week meal as they are incredibly quick to make and often involve using the left over vegetables that you have lying around in your fridge! This recipe is full proof and has never let me down!

- 2 handfuls of noodles- Tesco udon £1/ Tesco egg noodle £1.20
- 1 red onion- Tesco 16p
- 2 cloves of garlic- Tesco loose bulb 30p
- 1/2 thumb sized piece of ginger- Tesco 99p
- 1/2 a head of broccoli- Aldi 42p
- 1 red pepper- Aldi 47p
- 1 carrot- Tesco loose 6p/ redmere bagged Sainsburys 45p
- 2 tbsp sunflower oil- Tesco 80p
- 2 handfuls of spinach- Tesco £1/ Sainsburys 90p
- 1 lime- Aldi loose 28p
- Soy Sauce- Tesco own brand 59p
- On a chopping board, peel and slice the onion then peel and finely chop the garlic cloves. Chop the edges off of the ginger and finely chop.
- Cut the broccoli florets of the stalk and then finely slice the stalk. Cut the top off the pepper and scoop out the seeds with your hands. Cut the pepper in half and chop into slices.
- Place your frying pan (or if you have one, a wok) on a medium heat and add the onion, garlic and ginger with the red oil. Fry until the onion is lightly golden and soft. This will preobably take around 2 to 3 minutes.
- Throw in the broccoli, pepper and carrot and fry for another 2 minutes, stirring regularly.
- While this is frying, cook the noodles according to the instructions on the packet. Drain them and place them to one side.
- Stir in the spinach and allow it to wilt. Then add the noodles. Toss well for a minute to heat through.
- Squeeze over the juice from half a lime and add 2 tbsps of soy sauce, then toss to coat. Serve!!
You can also add some nuts and coriander for extra flavour and texture but this depends on your taste buds as not many people enjoy the taste of coriander!
This recipe seems long and laborous but in actuality, it is relatively quick and you will be done before you know it!
If you don't want it with noodles you can always fry the vegetables and cook some rice instead!
Feel free to include tofu, chicken or prawns into the recipe!!
