Heartwarming chilli!
This is a lovely, quick recipe making good use of any dried beans or kidney beans you have lying around. I would use canned kidney beans as you don't have to cook them as long but you can always use black beans and any other bean if you prefer!

Oil- Tesco sunflower oil 80p

Mushrooms- 90p

Garlic- 1 bulb for 30p or 3 bulbs for 90p

Red pepper- 47p from Aldi

Chilli sauce/powder- Sainsburys mild chilli sauce 95p or Chilli powder for 85p and tomato puree 40p

- Drain and rinse the kidney beans, and heat the oil in a pan and fry the onions and garlic for five minutes, until the onions are soft and fragrant.
- Add the mushrooms and fry for five minutes before adding the red pepper and spices to the mixture. Make sure they are stirred together and simmer for a bit so the flavours can mingle.
- Then add the beans to the mixture. If you are using chilli powder I would keep the kidney bean water to help make a sauce or you can mix in watered down tomato puree. If you are using a pre-made sauce then you can add water or yogurt depending on how thick and creamy you would like it.
- Bring to boil then cover and let simmer for another five to ten minutes.
- If you are having rice or couscous, cook them regarding the instructions on the packet. Serve the chilli with either rice,tortilla,couscous or bread and coriander for extra flavour.
If you are using the kidney bean water it will help to create a thicker sauce, adding a creamy-like taste. You can also mix in yogurt if you want a creamier, denser flavour as well. I would recommend using some paprika, tarragon and pepper for extra seasoning, to really give it some depth of flavour!
I would also recommend using the powder over the sauce if you want more authentic, fresh flavour but in the end, its your taste buds!
