Long life banana bread!

Growing up in a household with Caribbean influences, one of the many snacks we had lying around would be a tasty loaf of banana bread. My mother would often have a slice with butter and my father liked his with some marmalade but I would often eat it plain or with a cheeky spoonful of Nutella!
Banana bread is great to make when you have some browning, uneaten bananas left in your fruit bowl and makes a great snack to quickly pack for the day or in your kids lunch boxes!

Ingredients


  • 225g Flour- Aldi plain flour 45p
  • 100g Brown/Demerara Sugar- Aldi Demerara sugar 65p 
  • 75g Sunflower oil- Tesco 80p
  • 3 tsp Baking powder- Sainsburys 90p
  • 3 Bananas ( can be more)- Aldi loose 12p
  • 3 tsp Cinnamon- Tesco 85p
  • 1 tsp Nutmeg- Tesco 85p

  1. Make sure to pre-heat your oven to 200 degrees Celsius, so that it will be ready when you have finished making your batter.
  2. Peel and mash the bananas with a fork, I like to leave little lumps in my dough so that there are soft, chewy bits in my bread but that depends on your taste! Mix well with oil and sugar.
  3. Add the flour, baking powder, cinnamon and nutmeg and combine well. If it comes out a bit stiff and 1 cup of water and mix.
  4. You can also add any additional ingredients if you so desire. Sometimes I like to add some walnuts or dates but you can also add some chopped apples or pineapple.
  5. Line a baking load tin with butter or oil and pour in the mixture. Bake for 20 minutes.
  6. After 20 minutes, cover the load with tin foil and bake for another 40. The tin foil will stop the top from burning while the inside is still cooking. If you want a softer bread, bake for 35 minutes.
  7. Allow to cool before slicing!


Sometimes I like to drizzle a little bit of honey or maple syrup on top of the bread to add extra flavour! You can really experiment with the bread as banana tastes so good with any thing! Try adding some coconut or even peanut butter! You can go really crazy and add a dash of rum into your mixture before baking!
