Green Pepper and Mushroom Stroganoff!
Here's a tasty one for you! Serves 4.
Ingredients

Oil 1 tbsp - Tesco Sunflower Oil 80p
·
Green pepper, half - Tesco 50p, Aldi 47p
·
Mushrooms, 2 handfuls - Tesco closed cup mushrooms 90p
·
Butter, 1 tbsp- Tesco Butter Me Up 80p, Aldi Beautifully Butterfully Light 75p
·
Salt and pepper
Sour Cream 100ml- Tesco 150ml 60p
·
Rice/couscous/pasta/bread
·
Parsley- Tesco dried 70p
·
water- for pasta,couscous and rice
- Melt the butter and oil in large frying pan and cook the onion and pepper over a medium heat for 7-8 minutes. The onion should become translucent and golden at the edges and the pepper should start to soften. For extra flavour you can use a red pepper.
- Add the mushrooms and cook for 5-6 minutes, stirring occasionally, until gold and soft.
- Add water into pan and bring to boil, make sure to keep an eye on it so the bottom of the pan doesn't burn. Reduce heat and season with salt and pepper to taste and gently simmer. It should begin to thicken slightly. If you want it thicker add a tbsp of flour. At this point you cant taste it and add extra seasoning if you wish, I love it with smoked paprika!
- Remove from heat and stir in the sour cream. Add parsley and serve with either rice, couscous, pasta or just with bread. You can always add flour or butter for extra creaminess and thickness, enjoy!!!
